Mara lake.

A couple of weeks ago, Brent and I went to Mara Lake and camped with a few of his old friends from high school. It was a long drive - about 4 1/2 hours. It wasn't that bad because a) I didn't drive and b) I had Brent all to myself with no distractions!! I really enjoyed our conversations and just being with him.

We left before noon and didn't get there until close to dinnertime because we made a couple of detour stops. We stopped by Vernon where Brent grew up. It was so neat to see his old house, school, places where he used to hang out, etc. We also stopped by at a local flea market on the side of the road. Charming!

We finally arrived at the campsite and we were greeted by his friends. It was nice getting to know them better and of course, hearing some crazy stories from the past. Aside from storytelling around the campfire, we played games like volleyball, ladderball, badminton, etc. It was fun, I forgot how much I love camping!

It was too cold to swim in the lake but not for taking some scenic photos. I asked Brent to take some pictures so that we can hang them in our house, specifically the hallway bathroom. Here are the photos that I chose. I did a little photoshop work to enhance the quality. Me likes!




I can't wait to print these and hang them up. We have a frame that holds 3 photos so it's perfect! Even better that we created these together (insert violin music).

After our camping trip, we both agreed that we miss his old Westfalia. Maybe if an awesome deal comes up, we'll get one! And maybe next time, we'll take Kreacher and Milo!

Easy bolognese.

Since Brent renovated our kitchen, I am addicted to doing 'kitchen' stuff. You know, stuff like cooking, washing dishes... I love spending time in there!

Yesterday I created my first 'weekly meal planner'. I went grocery shopping today and bought everything on the list and nothing more! For dinner tonight, I made 'spaghetti with zesty bolognese'. I made enough for tonight and for our lunches on Monday. It was easy and yummy!

TITLE:
Spaghetti with Zesty Bolognese

PRODUCER:

THE CAST:
1 small onion
1 carrot
1 celery stem
1/4 low fat Italian dressing
Extra lean ground beef
1 can tomato sauce
1 can (398 ml) diced tomatoes, untrained
1 tbsp Italian seasoning
2 tbsp light cream cheese
Spaghetti
Parmesan

AND ACTION:
1.
Sauté diced onions, carrots and celery in dressing on medium heat until tender.

Add meat; cook on medium-high until browned, stir frequently.

3.
Stir in tomato sauce, diced tomatoes and seasoning. Bring to boil then simmer on medium-low heat for 15 mins, stir occasionally.

4.
Meanwhile cook spaghetti, omit salt.

5.
Remove sauce from meat. Add cream cheese. Stir until completely melted.

6.
Drain pasta and place on platter. Top with sauce and parmesan.

END SCENE.

Try it out. It's yummy and healthy. You can cook with whole wheat spaghetti or use ground turkey. I will definitely use this recipe again. It was easy to make, ingredients were inexpensive and you can make a huge batch of it!

Okay so now that is done, gotta go and work on some photoshop. A couple of weeks ago, we went to Mara Lake with some friends. Brent took some nice scenic photos that I want to frame and hang in one of our bathrooms. Bye for now.
